Kwame honors the history of this Caribbean classic dish by honoring its cooking methods, which require brining and smoking chicken.
He makes a homemade jerk paste using ingredients such as thyme and Scotch bonnet peppers. He then serves the jerk chicken with simple jerk barbecue sauce.
