VEGAN FRIED CHICKEN (made from mushrooms!) + SOUTHERN-STYLE SIDE DISHES

Fried chicken made from mushrooms? YES. You need this recipe in your life- have at it

Mashed Potatoes
– 10 Yukon golden potatoes- cut into fourths
– vegan butter – 1 1/2 tbsp
(I love this butter because it’s palm oil free)
why avoid palm oil?
– hemp milk 1/4-1/2 cup depending on desired consistency
– vegan cheese
– black pepper

RECIPE
boil potatoes in lightly salted water until they can be mashed with a fork, easily
strain potatoes and return to the same pot on low heat
add in butter, hemp milk and vegan cheese
mash with a whisk
garnish with black pepper

Collard Greens
– 2 bunches collard greens – stemmed and coarse chopped
– handful cherry tomatoes – cut into halves
– 1/2 white onion – chopped
– 3 garlic cloves- chopped
– 1/2 tbsp olive oil
– 1 tbsp hot sauce
– 1 tbsp apple cider vinegar
– 1/2 tbsp black pepper

RECIPE
heat olive oil on skillet, low heat
saute onion and garlic
add in tomatoes and saute for a few minutes
add in black pepper and apple cider vinegar, saute
add in collard greens, splash of water
cover with a lid and let steam until collard greens are the optimal green color and texture
drizzle with a bit of hot sauce!

Corn on the cob
– 4 corn on the cob
– 1 tbsp vegan butter
– 1 tsp dried herbs
– 1 tsp garlic powder

RECIPE
Griddle corn until charred, about 5-10 minutes
rub butter and herbs on the cob and enjoy!

Fried Mushrooms
– oyster mushrooms
– dry batter: 1/2 cup chickpea flour, 1/2 cup all purpose flour, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tsp paprika
– wet batter: 1/2 cup chickpea flour, 1/2 cup all purpose flour, 1/2 cup hemp milk, 1/2 cup water, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tbsp cumin, 1/2 tsp turmeric, 1/2 tsp black pepper
– canola oil – 4 quarts (amount varies depending on frying method)

RECIPE
wash and pat dry mushrooms
break mushrooms apart to your desired size (I like them the size of my palm)
make two bowls of batter (wet and dry)
coat mushrooms evenly with wet batter
toss in dry batter
deep fry in 355 degrees until golden brown
OR pan fry them in a deep skillet/pan – leaving enough room for the mushrooms to fry

Sauce
– vegan butter
– hot sauce
– agave

RECIPE
I love this combo of butter, hot sauce and agave in a 2:3:1 ratio
mix however you like!
